Asian Sauteed Kale












Asian Sauteed Kale

1 T olive oil
1/2 large onion, diced
1 clove garlic, minced
2 bunches Kale, stems removed and washed thoroughly, about six cups
1/2 inch section fresh ginger with some flesh exposed
2 T soy sauce
1 c chicken stock
toasted sesame oil, optional

In a large pan with high sides, heat oil over medium-high heat. Sautee the onions until they begin to brown lightly and add garlic. Stir in the kale and fry for 3-5 minutes, stirring constantly, until the Kale begins to wilt. Cover for 2-3 minutes. Uncover and dump in soy sauce, stock, and ginger piece. Cover and continue to cook for 10-15 minutes or until Kale is tender and dark green. Remove from heat, remove ginger piece and drizzle with optional toasted sesame oil.
